Edamame Toast

We aren't big 'meat and potato' dinner eaters. Sometimes our dinners are crackers, cheese, tomatoes and salami or something. Sometimes baked chicken, peas and rice. That's about as close as we get.

I found an interesting recipe a while ago and we tried it.

Holy. Crap. So Good.


When we were in Italy we bought a bottle of balsamic reduction. It's incredible, you only need a couple drops. If you're going to make this, PILE on the goat cheese. We've had this for dinner twice now.

And it looks pretty too.

That looks really yummy. You know, I don't think I've ever had edamame... Might have to add this to my recipes to try list!

Too bad I can't do cheese!! I really enjoy edamame, but somehow, I don't think regular ol' edamame beans on toast would cut it...
