A Package

Someone sent me a package in the mail. You know how that is - when you get the slip in your mailbox, but you aren't expecting anything....it's not my birthday, it's not Christmas.....

Well, I wasn't completely surprised when I saw the name on the return address when I picked it up. But what did surprise me were the contents of the package:


So Robin and I go WAY back. We've known each other almost since I moved to Vancouver. It was one of those times when you meet someone and you know instantly that you will grow old together.

In the fall she is going to school to become a pastry chef. This is a major change - when she told me I thought "Well, yeah?! Why didn't we think of this ten years ago?!" When I visited her a few weeks ago, she made the best lime coconut macaroons I've ever tasted - seriously.

Now she's sent me home made gluten free/vegan cookies in the mail and honestly - they are incredible. I've even tried the gluten free cookies at two reputable bakeries here in Victoria and her cookies are way better - and they've been sitting in the post office since Monday. They are moist, cakey - exactly what I've been craving for 6 months now.

She's also sending me one page of a calendar that she bought in Victoria in November. We stumbled upon this great little craft fair and saw this guy and I fell in love with his drawings. Robin bought the calendar and she's been sending it to me - one sheet per month.

You know you have a good friend when you get baking in the mail. Seriously, I must have been a saint in a former life to have this woman in my life.

Wow that is awesome! Kudos to her for baking cookies that are gluten free!

Woh. I have a good gluten-free macaroon recipe too, but those sound awesome (I'm celiac too! High five!). And woh. I had to check if it was Rawbean going to pastry school!:)

It's amazing when you meet someone and know they'll be your friend no matter what.

I'm so glad you liked them! When I was little my Grandma used to mail us cookies at Christmas. It's always such a treat :)

Here's the recipe if you want to make them yourself...

Ginger Date Cookies
(from 'Wholefood' by Jude Blereau)

3/4 cup dried dates, finely chopped
3 cups rolled (flaked) oats
3/4 cup oat flour
1/2 cup walnuts, finely chopped
1/2 cup candied ginger, finely chopped
2 eggs (or replacer for vegan)
1/2 cup almond oil
1/2 cup honey

Preheat oven to 350. Line baking sheet with parchment.

Soak dates in 1/2 cup boiling water for 10 minutes, then mash.

Combine oats, oat flour, walnuts and ginger in a bowl. Add mashed dates and all the wet ingredients. Knead together with your hands until well combined.

Shape into balls (size of golf balls) place on sheet and press into circle shape. Bake for 10 - 15 minutes, or until light golden. Cool completely before moving.

(Note: batter gets stickier and easier to deal with once the oats soak up some of the moisture.)

(Note: these taste even better after the first day)
